  This delicious blend of herbs and tangy pickles in a light mayonnaise envigorates fish with zest and brightness enhancing their subtle taste. The lemon too bites whilst the parsley gently teases with its texture and homely taste.

This Tartare sauce recipe goes well with any fish.

Ingredients:

1 tsp fresh tarragon or chives, chopped
2 tsp fresh parsley, chopped
175ml (6floz) mayonnaise
2 tsp capers, chopped
2 tsp gherkins, chopped
1 tbsp lemon juice

Method:

Chop ingredients as finely as you like. Chunky tartare sauce makes a nice change. Mix all the ingredients together and stand for at least an hour before serving.
